Cover and refrigerate for at least 2-3 hours. Take it out and mix it again until it has the consistency of thick yogurt.
Add 1/2 cup of salted caramel sauce on it and leave it in the freezer for a few hours again.

11. Mint Brownie Ice Cream

1/2 cup of fresh mint
1 1/2 cups soaked cashews
can coconut milk
3/4 teaspoon mint extract
1/4 cup cane sugar
1/4 cup agave maple syrup
3 tablespoons of coconut oil

For the Raw Brownie

1 cup packed seedless dates
1 1/4 cups raw walnuts
1/3 cup cocoa powder

Instructions

Add half the mint to the coconut milk and boil for a few minutes. Keep on low heat and stir gently. After it cools down, add the remaining milk and mint and pass it through the blender.
Add the cashews and mix for 3-4 minutes. Adjust taste as needed.
Pour into a bowl and freeze for 2 hours.
Meanwhile, mix the dates until they are small pieces and set aside.
Add the nuts and cocoa powder and mix until well combined.
Shape into bricks using plastic wrap and freeze for an hour.
Serve the ice cream with the pieces of cake after it has melted.
