It takes about 1 hour to 1 hour and 20 minutes to prepare the dish. So for this dish (for 10 servings) we need:

Ingredients for the filling:

  • 8 medium apples
  • 1 lemon, juiced
  • 2/3 cup coconut sugar (or sub organic cane sugar)
  • 1.5 teaspoons ground cinnamon
  • 3 tablespoons arrowroot starch or cornstarch (for thickening)
  • 1/4 cup fresh apple juice (or water)
  • 3/4 teaspoon freshly grated ginger (optional)
  • 1 pinch of nutmeg (optional)

Ingredients for TOPING:

  • 1 cup gluten-free oatmeal
  • 1/2 cup almond meal
  • 1/2 cup unbleached all-purpose flour (i.e. gluten-free flour)
  • 1/2 cup coconut sugar (or sub organic cane sugar)
  • 1/2 cup sub organic brown sugar
  • 1/2 cup walnuts (roughly chopped)
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon

  • Let’s start with the basic step, namely preheating the oven to 350 degrees F or 175 degrees C.
  • Next, peel and core the apples and start slicing them lengthwise.
  • Now put the sliced ​​apples in a large mixing bowl and place all remaining ingredients in the bowl and start tossing until homogeneously mixed and then place on a large baking sheet.

  • Now take half of the cookies and start pouring 1 teaspoon of coconut oil on it. Then put it back in the freezer for a few minutes until the butter hardens and is no longer runny.
  • Now fill the next half with cookies and press lightly to stick. Then you can pour melted chocolate (as in the photo) on it for a more chocolatey tooth.
  • Enjoy the cookies or you can put them back in the freezer to rest. REMEMBER: Cookies will begin to soften if kept at room temperature for more than 30 minutes.

  • Add 5 tablespoons of melted coconut oil and pulse and mix well. It should form a dough-like structure. The dough should stay between the fingers when pressed. If dry, add more coconut oil.
  • Then add chopped walnuts to make them chunkier.
  • Now transfer the mixture to the baking tray and spread it evenly. Press firmly with a flat surface object such as glass until well packed.
  • Place in the preheated oven and bake for 15 minutes, then increase the temperature to 375 degrees F and heat for another 5-10 minutes until the edges turn golden. Then let it cool slightly.
  • Now take different bowls and add chocolate to one and almond milk to the other. Boil the milk in the oven for about 30-40 seconds, then pour it over the chocolate and let it rest for 5 minutes without touching it so that it melts well. Mix well to incorporate later.
  • Add coconut oil in it and cover with a lid and set aside for 10 minutes to melt.
  • Now use a mixer or whisk and mix well. If you want a sweeter taste, add some powdered sugar and mix again.
  • Now pour the ganache over the cooled crusty oat mixture and spread it well and sprinkle some salt on it to taste. Place the tray in the freezer until the ganache is no longer sticky and slightly firm.
  • Now remove the crust from the baking sheet and slide it onto the baking sheet. Remove the parchment paper to prevent burning. Then put the marshmallows on it and put it in the oven for 30-40 seconds. Keep an eye out, as marshmallows tend to burn easily and quickly.
    Finally, remove the paper and cut the peel into 9 bars to enjoy it fresh.

This dish only stays for 24 hours and is NOT freezer friendly. Store at room temperature for no more than 24 hours. ENJOY!

  • Finally, take it out and pour some blueberry sauce on it and top it off with a few blueberries.
